During this period, he has diligently delved into what specifically the\u00a0wilderness of Latvia has to offer food-wise &#8211; the creation of a \u2018pure regional cuisine\u2019.\u00a0This encompasses all that grows and is edible in forests, game and local recipe\u00a0beverages that can all be considered legitimate for a feast (or for inclusion on a\u00a0restaurant\u2019s menu). Here the chef is focused on pure, natural, organic fare and\u00a0ingredients; maximum flavor effect with minimal combinations.<\/p>\n<p>Dz. Kristovskis was selected Ambassador because his philosophy fully coincides with\u00a0the European Gastronomy Region concept for 2017 &#8211; \u2018\u2019Wild at palate\u201d.\u00a0 As the master\u00a0of herbs and spices points out, he spends multiple hours in wooded areas, fields and\u00a0meadows gathering and \u2018taste-testing\u2019 uncharted flora, unique only to Latvia, to in\u00a0turn be served in corresponding style in restaurants. Such flora as goose-foot, ground-\u00a0elder, nettles and lady&#8217;s mantle are just some of what can be found on Dzintars\u2019 menu.<\/p>\n<p>Dz. Kristovskis explains:\u201c Technology and cooking is so advanced that I feel the urge\u00a0to go back to the roots. The concept devised by Riga-Gauja Region is a distinct\u00a0reflection of this \u2013 products and ingredients that our people have gathered, savored,\u00a0featured in meals for hundreds of years \u2013 straight from our forests, meadows, streams\u00a0and lakes.\u201d<\/p>\n<p>THE EUROPEAN GASTRONOMY REGION<\/p>\n<p>The Riga-Gauja Region\u2019s leading partner is the Riga Tourism Development Bureau,\u00a0but its partner in cooperation is the tourism cluster at Gauja National Park, Sigulda\u00a0Region Council, Valmiera City government, C\u0113sis Regional government. The Latvian\u00a0region has been bestowed the title of European Gastronomy Region 2017, accenting\u00a0natural wonders and the gastronomic heritage of the specific area. This will result in a\u00a0long list of special events and activities next year.\u00a0Therefore, the concept of \u00a0Wild at palate (Ar dabu \u0161\u0137\u012bv\u012b &#8211; latv.) has been created withthe objective &#8211; popularizing those products and ingredients that are readily available in\u00a0forests, fields and rivers just outside our windows.\u00a0This project\u2019s focus is promoting gastronomic tourism and to provide publicity for\u00a0Gauja National Park as a desired destination. In turn, the project touches upon\u00a0education, the correlation of the rural and municipal, healthy, organic food in our\u00a0diets, local cuisine, dining traditions, catering and hosting, business ventures thereof\u00a0in gastronomy &#8211; all that will be undertaken by the project partners.\u00a0The ultimate goal is improving quality of life in Europe\u2019s regions, preserving local\u00a0food preparation and dining traditions, promoting the quality and value of the\u00a0homegrown &#8211; the old and the new; and, of course, making the region attractive to\u00a0tourists.<\/p>\n<div>The\u00a0<b>European Region of Gastronomy Platform and Award<\/b>\u00a0aim to contribute to better quality of life in European regions, by highlighting distinctive food cultures, educating for better health and sustainability and stimulating culinary innovation.<\/div>\n<div><\/div>\n<div><b>IGCAT &#8211; International Institute of Gastronomy, Culture, Arts and Tourism<\/b>\u00a0&#8211; gives the award, with the support of European institutions.
