That honor goes to France, and even in the United States, the earliest-known restaurant was in Boston \u2014 Julien\u2019s Restorator, which opened in 1794.\u00a0But it didn\u2019t take long for New York to catch up.\u00a0In 1810, the city directory listed five free-standing \u201cvictualling houses.\u201d By 1847, a tourist guide estimated that there were about 100 restaurants, plus the \u201cOyster Houses and Cellars, which are numerous in all quarters of the city.\u201d A decade later, there were thousands.\u00a0The making of the \u201ccity of restaurants\u201d changed how we eat, where we eat, and \u2014 especially \u2014 how fast we eat.
